Studies on Quality of Butter Consumed in Elazığ

The prupose of thıs study was to determine qualty of butter in Elazığ. 35 butter samples were examined. The average values were, total viable aerob colony 9.1x105/g coliforms 4.10104/g, enterococcus 9.1x104/g., proteolytlc 4 1x105/g, lipolytic 7.4x105/g, psychrophillc 3.9x105/g. yeasts and molds 9.0x105/g. Microbiologically 100% of examıned samples and chemcacally 85.7% of the m did not flt to Food Regulations and Standards
