The prupose of thıs study was to determine qualty of butter in Elazığ. 35 butter samples were examined.
The average values were, total viable aerob colony 9.1x105/g coliforms 4.10104/g, enterococcus 9.1x104/g., proteolytlc
4 1x105/g, lipolytic 7.4x105/g, psychrophillc 3.9x105/g. yeasts and molds 9.0x105/g. Microbiologically 100%
of examıned samples and chemcacally 85.7% of the m did not flt to Food Regulations and Standards
